Recently the City of Monmouth, Oregon has been notified of an outbreak of food borne illnesses. Over 35 cases of food borne illness have been reported and confirmed. Each year one in six people get sick from a food borne illness and 3000 people in America die. (CDC Food and Safety)
There are several causes that spread food borne illness. Food storage is one of the main contributors. It is imperative to make sure you are packaging and storing your food correctly. To prevent food borne illnesses outbreaks you must store your perishable food in a freezer or refrigerator immediately. Your refrigerator temperature should be 40 degrees Fahrenheit and your freezer should be at zero degrees Fahrenheit. (U.S. Department of Health and Human Services) It is also important to either keep a thermometer in the refrigerator or freezer or check it on a regular schedule to assure you are keeping food at the correct temperature at all times. Another common mistake, that causes contamination, is how the food is stored. For example meat, purchased at the grocery store, is only good for a couple of days in the container it is purchased in. If needing to keep stored for a longer duration of time you will need to wrap the food tightly in containers appropriate for freezer storage. When storing in the refrigerator or freezer you also need to assure that none of the blood is leaking out of the storage containers and causing contamination to other foods. Food borne illnesses can be contained by using some simple rules. Always wash your hands before and after handling food. Wash knives, cutting areas, and containers with hot soapy water to prevent spreading bacteria. You may also use diluted bleach to sanitize utensils and cutting or cooking surfaces. Thoroughly rinse raw produce to wash off any harmful chemicals in fertilizers or bug repellant that might be used on the produce. It is also important to ascertain that food is prepared correctly to reduce the risk of spreading food borne illnesses. Make sure that meat and animal products are thoroughly cooked. Make sure you follow recipe directions or consult reliable and accurate cooking information online. Additionally you can use a thermometer to check cooking temperatures are appropriate and that whatever you are cooking is completely cooked.
Common Symptoms of food borne illness are vomiting, diarrhea, abdominal pain, fever, and chills. Symptoms can range from moderate to severe. It is important to seek medical attention if you suspect severe dehydration or symptoms last longer than 24 hours in children and two days in adults Credible information is required for making reliable and accurate health decisions. When researching current conditions of our public health as well as how to prevent food borne illnesses you want to make sure the person or information source you are receiving information from is credible. There are several government sites that are responsible for keeping the public apprised on the updated health status of our country. One primary source of reliable information can be found at The Center for Disease Control at www.cdc.gov. The food and Drug Administration is also a reliable source. This can be located by going to www.fda.gov. On the FDA website you can research as well as report a problem that you have experienced or become aware of. Your current county can also provide you reliable information by going to www.co.polk.or.us. Here you are able to locate the current public health notices, statistical information, and local community health resources.

It is commonly found on raw meat and poultry. The bacteria’s survival is based on conditions with very little or no oxygen. The toxin it generates causes the food borne illness. Clostridium perfringens bacteria grows in food after it has been cooked.
